When making a sauce or a gravy, there are a couple of methods old world chefs as myself use. The most delicious and efficient one is called a roux. A roux is flour and oil. Butter is the main fat used. In New Orleans, those fat boys like to use oils. Not olive oil.

 Roux is used in Louisiana in all their dishes. That is why southerners led the way in fatties.

Now here is a trick to thicken soups and sauces.

Use equal parts of corn starch and flour. The corn starch and flour when mixed into the sauce, resemble cream. No one will know.

Another awesome trick is to substitute apple sauce for oil when making a cake.

What! A cake. Yes. Cakes. In my videos you will learn how to make no fat cakes.
